Salsa Chicken Recipe

 

 

This is a super simple recipe you can throw together in minutes! Double it and have enough for  several meals. This can be made in a pressure cooker or slow cooker. I used to make it in my slow cooker until I got the Instantpot for Christmas one year.

Salsa Chicken

2-3 large chicken breasts (I’ve made it with one large breast before and it still turned out great)

2 cans corn, drained

2 cans black beans, drained

1 Jar salsa, drained

Throw everything into your slow cooker or instant pot, if using the slow cooker, cook on high for about 4 hours or until chicken is completely done and shredding. If using your pressure cooker, cook at high pressure for 25 minutes. 

When done, remove chicken from the pot and shred with a fork, place it back in the pot and mix with the beans and corn.

It’s done! Serve on Tortillas or over rice! 

 

This is definitely a family favorite, and it always makes enough for leftovers, even with my family of 6!
